Greek Inspired Orzo Stuffed Crinkle Sweet Peppers



8 red peppers 

2 tbsp butter

2 shallots, peeled and chopped 

2 garlic cloves, peeled and minced 

1.5 cups orzo

3 cups vegetable stock 

1 large handful fresh spinach 

1/4 tsp sumac

1/4 cup sundried tomatoes (prferably pcked in oil), chopped 

1/2 cup sliced kalamata olives 

6 oz feta or goat cheese 

2 tbsp lemon juice 

2 tbsp extra virgin olive oil 

fresh basil and oregano for garnish 



Grill peppers on high heat grill or grill pan until char marks form.

In the meantime, over medium heat, melt butter in a large pan.

Sauté shallots and garlic until softened. 

Add orzo to the pan and toss.

Pour stock into the pan, season with salt, bring to a boil and reduce to a simmer, covered. Allow to simmer until liquid has absorbed. 

Toss immediately with spinach, allowing it to wilt. 

Toss orzo with remaining ingredients. 

Cut off top of peppers and carefully remove the seeds. Fill with orzo and enjoy!
