Buffalo Chicken Cucumber Roll

Ingredients

  • 1 large cucumber
  • 1/2 cup cooked and shredded chicken
  • 1/4 cup buffalo sauce
  • 1/4 cup mayonnaise
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Fresh chives and dill (for garnish)

 

Instructions

  1. Slice the cucumber lengthwise using a vegetable peeler or a mandolin slicer to create thin strips
  2. Pat the cucumber dry then lay the strips flat next to each other slightly overlapping. Spread mayonnaise over cucumber base, then diagonally place the shredded chicken, buffalo sauce, celery, red onion add salt, and pepper.
  3. Drizzle buffalo sauce over chopped veggies and chicken
  4. Roll the cucumber strip tightly around the filling to create a roll.
  5. Securing the roll with a toothpick if needed, cut it into 6 rolls.
  6. Garnish rolls with chopped chives and dill.
